Baked Apple and Banana Oatmeal

Ingredients

  • 2 cups rolled oats (500mL)
  • 1/2 table spoon of baking powder (7mL)
  • 1 teaspoon of cinnamon (5mL)
  • 1/4 teaspoon of salt (1mL)
  • 1 apple, diced
  • 1 banana, sliced
  • 1 egg
  • 1 cup of skim milk (250mL)
  • 3 tablespoons of canola oil (45mL)
  • 1/3 cup of maple syrup or brown sugar (75mL)
  • 3/4 teaspoon of vanilla extract (4mL)
  • Canola oil cooking spray

Instructions

Oatmeal
  1. Before beginning, set the oven on preheat to 350°F (180°C).
  2. In a large bowl, mix together oats, baking powder, cinnamon, and salt.
  3. Stir well.
  4. Once that mixture is properly stirred, add in the diced apples and bananas. Keep this aside.
  5. In a separate bowl, whisk together the egg, skim milk, canola oil, maple syrup or brown sugar, and vanilla extract.
  6. Pour the mixture created in step 4 over the dry mixture and gently stir to combine.
  7. Use a 8x8 inch or 20x20 cm baking dish and spray it with canola oil.
  8. Pour the mixture into the baking dish and bake for approximately 45 minutes or until it turns golden brown.
