Surprise quick quiche

Ingredients
- 3 large eggs
- 1 1/2 cups of 1% milk (375 mL)
- 1/4 cup of whole wheat flour (50 mL)
- 2 tablespoons of cornmeal (25 mL)
- 3 green onions, chopped
- 1 1/4 cup of shredded lower-fat Cheddar cheese (300 mL)
- 3 tablespoons of cooked bacon bits (45 mL)
- 9-inch (23 cm) pie plate
- Vegetable oil spray
OPTIONAL:
Instructions
- Preheat oven to 400◦ F (200◦ C).
- In a blender or food processor, combine eggs, milk, flour, and cornmeal. Blend for 30 seconds or until the mixture looks well blended.
- Spray the pie plate with the vegetable oil.
- In each pie plate, gently toss the green onions, cheese, and bacon bits (for the meatless version, add the chopped veggies)
- Bake in the oven for 20-22 minutes, or until a fork inserted in the center comes out clean.
Alternative Suggestions
- The cheddar cheese can be substituted with shredded Swiss cheese
